1/2 cup light olive oil vinaigrette
1/4 cup Natural Delights Medjool dates, coarsely chopped and pitted (about 4 dates)
2 1/2 cups cold, cooked chicken, cut in 6 mm cubes
2/3 cup Natural Delights Medjool Dates, pitted, cut in 6 mm cubes
2/3 cup red bell pepper, cut in 6 mm cubes
1/2 cup green onions, sliced
12 small butter lettuce leaves
Puree all dressing ingredients in a small blender or food processor until smooth. Cover and refrigerate until ready to serve. (May be prepared several days ahead and stored tightly covered in the refrigerator.)
Place the chicken, dates, bell pepper and green onions in a medium bowl. Drizzle with the dressing and toss well to coat.
