Medjool Date and Apple Sandwiches

Ingredients

  • 2 apples (Pink Lady, Royal Gala and Fuji are our favourites)
  • 1 tsp. lemon juice
  • ½ cup almond butter or peanut butter
  • 6 to 8 Medjool dates, pitted and sliced into quarters
  • Optional toppings: granola, finely chopped nuts, coconut to sprinkle

Preparation

  1. Slice the apples across into slices 1.3 cm thick. 
  2. Scoop out the core with melon baller. 
  3. Brush the slices with lemon juice. 
  4. Spread one side of each slice with the nut butter. 
  5. Arrange the sliced Medjool dates on the nut butter. 
  6. Sprinkle with any desired crumbly additions. 
  7. Top with a matching apple slice.

Enjoy immediately or wrap for a healthy and delicious on-the go snack.
