2 cups Natural Delights Medjool dates
1 large red apple such as Lady Williams, Cripps Red (Sundowner) or Eve
Juice of ½ lemon
113 g semi-hard cheese such as Manchego, Cassini, Romano or Gruyere, sliced.
85 g Prosciutto, thinly sliced, cut into 5 cm pieces
Using a small knife cut a slice in one half of the date lengthwise. Discard pits.
Core and quarter the apple. Slice each quarter into thin slices. Sprinkle with lemon juice.
Fill each date with a torn half or third of a slice of cheese and a sprig of arugula.
Wrap date with a small piece of prosciutto. Place on an apple slice.
