Medjool Date Bread

Ingredients

  • 1 cup Natural Delights Medjool dates, pitted and chopped (about 10 dates)

  • 1 tsp. bicarbonate of soda

  • 1 cup boiling water

  • 1 1/2 cup flour

  • 1 cup caster sugar

  • 1 tbsp. butter

  • 1/2 tsp. salt

  • 1 egg

  • 1/2 cup chopped walnuts

Preparation

  1. Preheat the oven to 170 °C. and lightly grease a loaf pan measuring 23 cm x 13 cm. Place the dates in a large bowl and sprinkle with the bicarb soda. Pour boiling water over the top and set aside to cool.

  2. Add the flour, sugar, butter, salt and egg to the cooled date mixture, beating well. Stir in the walnuts and pour into the prepared pan.

  3. Bake for 1 hour or until a toothpick inserted into the centre comes out clean.

  4. Let stand for 10 minutes, then remove from the pan and cool on a wire rack.
