Medjool Date Raw Energy Bars

Ingredients

  • 2 cups Natural Delights Medjool dates, pitted and chopped (about 20 dates)

  • 2 cups raw cashew nuts

  • 3/4 cup unsweetened cocoa powder

  • 1/2 cup natural almonds

  • Pinch sea salt

  • 1/2 cup unsweetened shredded coconut

  • 2 tbsp. vanilla extract

  • 3 tbsp. cold water

Preparation

  1. Place the dates, cashews, cocoa powder, almonds and sea salt in a food processor. Pulse until coarsely chopped.

  2. Add the coconut and extract; pulse again, adding the water a little at a time until the mixture makes a moist but not sticky dough.

  3. Press firmly into a 23 cm square baking dish. Chill for 1 hour before serving.
