1 cup peanut butter chips
1 cup semi-sweet chocolate chips
1/3 cup creamy peanut butter
2 3/4 cups crispy chow mein noodles
8 Natural Delights Medjool dates, pitted and halved lengthwise
Mini marshmallows (just a few)
Line 2 baking sheets with parchment or waxed paper.
Set a medium heatproof bowl over hot (not boiling) water. Add the peanut butter and chocolate chips; cook, stirring frequently, until melted and smooth. Remove from the heat and whisk in the speanut butter.
Stir in the noodles until well coated.
Using a soup spoon, scoop out the mixture onto the prepared baking sheets to make 16 mounds. Top each with a Medjool date half and press gently onto the noodle mixture. Refrigerate for at least 30 minutes or until the chocolate is set.
Using scissors, cut mini marshmallows into small bits. Dip in the melted chocolate and press onto the dates to make eyes for the spider. Place a chocolate dipped mini chocolate chip in the centre, if desired.
Tip: Once firm and set, you can keep these treats refrigerated for up to 2 weeks in an airtight container.
