Greek Yoghurt with Honey Macerated Citrus and Medjool Dates

  • 1/2 cup plain, non-fat Greek yoghurt

  • 1 medium orange

  • 2-3 Natural Delights Medjool dates, pitted and chopped

  • 1 tbsp. honey

  • 1 tbsp. chopped pistachio kernels or pomegranate arils (optional)

  1. Place the yoghurt in a small bowl. Remove the peel from the orange by carefully cutting off each end, then slicing down the sides. Squeeze the juice remaining in the peels over the yoghurt. Slice the fruit first into circles and then in half to form semi-circles. Arrange over yoghurt.

  2. Drizzle with honey and sprinkle with the dates and pistachios. May be prepared several hours ahead and stored in the refrigerator to macerate.
